SorgPlus Sorghum - Cucumber & Feta Salad
Method

Combine sorghum, olives, artichokes, shallots, basil, and feta in a large bowl.

In a small bowl, whisk together olive oil, lemon juice, and black pepper.

Pour over salad and toss to combine.
Ingredients
1 cup SorgPlus, cooked and chilled
1 medium cucumber, diced
1/4 cup pitted Kalamata olives
1/4 cup chopped artichoke hearts
1/4 cup sliced shallots
4-5 basil leaves, torn
80g feta cheese
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon black pepper
